A savory, comforting, fall dinner!

Ever since more people have found out about my blog, the one question I am asked, how do you have the time to do it? Well, it does not take that much time. Most people have to fix dinner right? Well, some do. Some of my friends don't cook at all, so that is probably why that question comes about. Honestly, I did not cook a single meal this week until tonight. Grumpy wasn't home at dinner time, so I made do with what I had around the house for myself. Tonight though, I took a chance with dinner. I wasn't sure if Grumpy would be home to eat with me and I wanted what I wanted, so I made it anyway. Grumpy ended up showing up in time for dinner also...Read on to see what Grumpy thought of it!

I have had cravings for butternut squash. Maybe because its fall, but more likely because my parents gave me about 8 of them from their garden! I love the slight sweetness of the squash and roasted with a little olive oil, sea salt and pepper, you can't go wrong. I also love it just boiled in salted water, mashed, and seasoned with a dollop of butter, salt, and pepper. Once and a while (if I get a not so sweet one) I will drizzle some pure maple syrup in with the mashed squash. I have even made butternut squash dinner rolls. Something I may have to do now I have so many squash!

Prep

A few weeks ago I went on a search for some recipes to use some of the squash in and came across two that I wanted to make. Both were very different to me, but they both had components that really appealed to me. So far I have made one of the recipes.....twice! Soon, very soon I will make the other one, but tonight I want to tell you about the one I did make.

Frying the sage in browned butter

This is an awesome, craveable dish. Its vegetarian which makes it even more appealing to me. Grumpy actually ate two big ole bowls of it and he usually whines when I don't serve meat (I did offer to make a couple of glazier hot dogs to go with, but he turned them down!). Could be he was just starving after working so much all week long - he probably put in a total of 74 hours this week! I also made this dish for my last one day Caring for You weekend I attended a few weeks ago and it went over really well there also!

Dish 1 - used penne pasta

I found the recipe on A Good Appetite. No need to stray from the recipe - it is perfect as written. It has a bit of saltiness, a bit of sweetness. The pasta mixed in with the squash, browned sage butter, nutmeg, and feta (I used low-fat) is absolutely heavenly.

Dish two - made with a different pasta and not as dark of a squash - but still delicious!

My neighbor just gave me a butternut squash and I wasn't sure what to do with it - I know now! This looks really good...the flavors are outstanding! More great photos.

Wow that looks good. I love winter squash dishes, especially the savory ones.

I know what you mean about time and blogging--when my blogging drops off, as it has a bit right now--it is because I haven't had the time or energy to cook blog-worthy meals, not because I don't have the time to sit at the computer and type it up. Although I did fink out of typing up our last dinner because I have absolutely no idea what I put into the crucial spice mix. Ooops.
